After an eventful year in 2020, Three Twigs Bakery is now moving forward with the next phase of expansion. Owners Emily and Tim Lewis have signed a lease for the building at 3429 Freedom Drive formerly occupied by Pie’s the Limit.
“We’ve been trying to find a more permanent home for the bakery,” said Emily Lewis, explaining that the current location at 1370 Toronto Road was always meant to be temporary. “There was only so much we could produce in that space,” she said.
The new location is 2,800 square feet, with a kitchen three times the size of the Toronto Road location, and Lewis said that the landlord, Corky Joyner, has been very easy to work with. “He was really eager to get the space rented out and have a small business in that area again.”
Last summer, Lewis had announced plans to relocate the bakery downtown to a building on East Adams owned by Martin and Laurie Haxel. “Unfortunately, it didn’t work out like we had anticipated,” said Lewis, who explained that the project quickly became more complicated than anticipated with the need for blueprints and building permits. “Maybe building a kitchen from scratch isn’t for us; we were in over our heads.”
In contrast, the Freedom Drive location already has a working kitchen and will require only cosmetic updates. “What I’ve done with the other three businesses is move into a space that is already built and has a kitchen, flipping the space and making it our own,” said Lewis, referring to the couple’s other conversions. The current Three Twigs Bakery space was previously Free Press Coffee, while Biscuits + Brunch moved into the former Smashburger, followed by The Salted Lemon Market & Creamery taking over the former CherryBerry Springfield space next door.
Lewis said that the additional space will allow for Three Twigs Bakery to expand. “I want to have a forever home and have a space we can grow into,” she said.
A grand opening for the new location is planned for April 10.
