New construction is underway on the remaining outlot in Sherwood Plaza at the corner of Veterans and Wabash. CoreLife Eatery, a fast causal restaurant that prides itself on serving healthy meals, has signed a lease for the smaller 3,500 square foot outlot. It will be the first location in Springfield, although CoreLife Eatery has nearby locations in Champaign, Peoria and Normal.
The New York-based chain started in 2015 with a focus on offering healthy alternatives to traditional fast food and now has several dozen locations nationwide, with nearly another 20 in the works. Clay Baxter of Bloomington will be the local franchisee.
At the end of last year, Seritage Growth Properties announced plans to invest $20 million into overhauling Sherwood Plaza and the former Kmart property. Existing tenants Mosser Shoes and Red Wings Shoes have stayed, while new tenants so far include Binny’s Beverage Depot, Orangetheory Fitness and Burlington Coat Factory. A tenant build out is currently underway for a space that will become the first Springfield location for 5 Star Nutrition, and Outback Steakhouse opened earlier this year on the larger of the two outlots.
